Ingredients
1 cup pre-cooked black beans
1 tablespoon lime juice
2 ripe avocados
Salt and pepper, to taste
2 cups arepa flour
2 tablespoons sesame seeds
2 tablespoons chia seeds
2 1/2 cups water
1 tablespoon flaxseed meal
1 tablespoon olive oil
Directions
- Preheat the oven to 350°F.
- In a small bowl, mash the black beans with a fork or potato masher. Season with salt and pepper to taste.
- In a separate small bowl, mash the avocados with lime juice and salt and pepper to taste.
- In a large mixing bowl, combine the arepa flour, chia seeds, sesame seeds, flaxseed meal, and water. Mix well until a thick batter forms.
- Heat a large skillet over medium heat and add the olive oil. Using a 1/4 cup measure, scoop the batter into the skillet and cook until golden brown on both sides, about 4-5 minutes per side.
- Once all the arepas are cooked, transfer them to a baking sheet and bake in the preheated oven for 10-15 minutes to finish cooking.
- To assemble the arepas, slice each one in half and spread the mashed black beans on one half and mashed avocado on the other half.
