Soy-glazed tofu and mushrooms is a delicious and satisfying dish that is perfect for vegetarians or anyone looking to incorporate more plant-based protein into their diet. Ingredients

  • 1 block (14 oz) extra firm tofu, drained and pressed

  • 8 oz mushrooms, sliced

  • 1/4 cup low sodium soy sauce

  • 2 cloves garlic, minced

  • 2 tablespoons rice vinegar

  • 2 tablespoons honey or maple syrup

  • 1 teaspoon minced ginger

  • 1 tablespoon water

  • 1 tablespoon cornstarch

  • 2 tablespoons vegetable oil

  • Sliced green onions and sesame seeds, for garnish (optional)

Directions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Cut the tofu into cubes and place them on the prepared baking sheet. Bake for 20 minutes, flipping the tofu cubes halfway through, until lightly browned.
  • While the tofu is baking, make the sauce. In a small bowl, whisk together the soy sauce, honey or maple syrup, rice vinegar, minced garlic, and minced ginger.
  • In another small bowl, whisk together the cornstarch and water until smooth.
  • Heat the vegetable oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook for 5-7 minutes, or until they are tender and browned.
  • Pour the sauce over the mushrooms and stir to coat them evenly. Add the baked tofu cubes to the skillet and gently stir to combine.
  • Pour the cornstarch mixture over the tofu and mushrooms and stir gently to thicken the sauce.
  • Cook for another 2-3 minutes, stirring occasionally, until the sauce is thickened and the tofu is coated.
